This is the model of the daya model train locomotive you can eat!

Here’s what Charles had to say about his work of art…

I’m a 33 year old pastry chef at Whole Foods in Tanasbourne Oregon USA.

I’ve been a pastry chef for about six years with a degree from Le Cordon Bleu in patisserie and baking, where I found my love for building gingerbread projects.

Every year I choose something that makes my soul jump for joy.

I get started right away around March getting ready for Halloween. I have tradition and passion for the month of October.

I don’t do gingerbread projects for Christmas because I have a “Rustic” style of creating pastries.

It took me one year to plan, scale, budget for this gingerbread train.

Eighty-four hours to build, about one month.

The train is about two feet long.

When it comes to what I used, lets start from front to back. It is about 85% edible.

The front grill is tooth picks, the steam core is gingerbread cake wrapped in black fondant, the two humps are white chocolate truffles, the chimney is an ice cream cone, the steam is popcorn.

Wheels are thin mint cookies with pocky sticks.

I made the engine core out of wood because I used a model train fire light to give the look of a hot coal fire. I didn’t want to melt any parts with the heat coming from the light. I boxed it in with fondant.

The back I stacked gingerbread cake, shaped it, covered the outside with fondant, top is pretzels and coffee as coal.

    Looks great to me! And I also think it works for Christmas! Thought it may be ‘Rustic” many Christmas Decorations are done in fashions and styles that replicate the past!

    WoW, That is Amazing!!! I think that Chef Mason done an absolutely wonderful job on his creation. What a great talent, I love the smoke as well as all the detail put into this model. I am afraid if he had made it for me I would have to find a way to preserve it forever! I would enclose it in a glass case of some sort and show it off, along with Chef Masons autographed Photo. Thank you for sharing such a wonderful piece of art.
